Salt Life’s Favorite Shrimp Recipes; Part One: Kabobs & Tacos

Shrimp is a much-loved ingredient by many of the Salt Life team members - and why wouldn’t it be? This seafood is not only delicious, but it’s easy to find, affordable, and the perfect vessel for a wide array of preparations and cooking techniques. 

 

We asked Demi O’Connor, Nicole Spencer, and Connor Baxter for their favorite recipes, and they did not disappoint. 

 

Nicole and Demi both love cooking shrimp kabob-style on the grill, while Connor enjoys this seafood in the form of shrimp tacos. Take a look at these awesome recipes and don’t be afraid to try them for yourself!

 

Sweet Chili Shrimp Kabobs

Nicole stacks her skewers with shrimp and brushes them with melted butter and sweet chili sauce. Over medium heat on the grill, she consistently flips over the skewers and repeatedly brushes them with more melted butter and sweet chili sauce until the shrimp are thoroughly cooked. 

 

When the shrimp are done, she removes them from the skewers and serves them over a bed of yellow rice with a side of asparagus. Healthy, easy, and delicious!

Bacon-Wrapped Shrimp Kabobs

Bacon makes everything better - including shrimp. Demi’s favorite recipe is bacon-wrapped shrimp kabobs with pineapple. Does that sound delicious or what?

 

Demi’s tip for making this mouthwatering shrimp dish is to “add flavor to every step!” 

 

To get started, she smokes the bacon to add flavor and par-cook it. While the bacon is smoking, she seasons the shrimp and pineapple with salt and pepper. When the bacon is ready, she wraps one piece of bacon around each piece of shrimp and slides them onto a skewer.

 

In between each piece of bacon-wrapped shrimp, she adds a large piece of pineapple to the skewer. She places the skewers on the grill over medium to high heat, rotating them, so the shrimp cook evenly.

 

Just a few minutes before the shrimp is fully cooked, she takes the skewers off the grill and slathers them with guava barbecue sauce. She tosses the saucy skewers back on the grill to finish cooking.

 

Demi carefully removes the shrimp and pineapple from the skewers when the shrimp is cooked all the way through, and the bacon is crispy. This way of preparing shrimp is the perfect combination of sweet and savory that can be enjoyed as a snack, appetizer, or meal.

 

Shrimp Tacos

Connor’s shrimp tacos are so easy to make and can be customized with a variety of toppings.

 

He starts this recipe by cleaning and deveining fresh shrimp, although he does keep the shell on just the tail. This is his strategy for maintaining the shrimp’s moisture while they’re being cooked. 

 

In a hot pan, Connor sears the shrimp, getting them nice and brown on both sides. Then, he adds chili powder, cumin, paprika, and cayenne powder, along with a little bit of water. The spices and water will combine to make a delicious broth for the shrimp to finish cooking.

 

Once the broth has thickened, it’s time to make tacos! Connor puts a few shrimp on a tortilla and lets his imagination run wild with toppings. For a classic taco flavor, add lettuce, sour cream, guacamole, and salsa. Consider lime juice, pineapple slices, or mango barbeque sauce to add a tropical spin to the shrimp tacos.
