This large game fish is often hooked by anglers who are hunting for even larger game like sharks, barracudas, and tuna. Nonetheless, Amberjacks can grow big and meaty and are a pleasant surprise at the end of your line.

Pan Fried Amberjack With Skipper Gentry

Skipper pan fries his Amberjack, and recommends you do the same. Start by cutting your fish into bite size pieces and soaking them in a bowl of egg yolk and milk. Then, heat up a greased frying pan to 400 degrees and fry your Amberjack pieces for 2-3 minutes. That’s it. Cut, fry, eat. Delicious pan fried Amberjack, coming right up!

 

Skipper uses a half inch of thick grease that you would get from bacon and other meat drippings, but you can use your favorite cooking oil if you don’t have thick grease on hand.

Grilled Calamansi Amberjack With Captain Larry Shults

Captain Larry grills his Amberjack with a calamansi marinade. Here’s what you will need for this recipe. 

 

12-15 calamansi fruits, freshly squeezed

2 tablespoons of honey or 1 tablespoon of sugar

3-4, 4-5 inch Amberjack fillets

Pepper Spice

Garlic powder

Onion powder

Salt and pepper

 

The first step in the cooking process is to prepare your fillets by spicing both sides with a mixture of pepper spice, garlic powder, onion powder, and salt and pepper. Next, place your spiced fillets in a glass cooking dish. Then, pour your calamansi juice over your fillets and mix in honey or sugar and let sit for 30 minutes to marinate, rotating at the 15-minute mark to ensure flavors absorb through your fillets. It’s important not to marinate your fillets for more than 30 minutes as the citrus will cause the fish to become tough during the grilling process.

 

As your fillets are marinating, prep your grill with a liberal amount of non-stick spray or olive oil. Let your grill heat until it’s white hot. Place your fillets on the grill for 5-6 minutes per side. Your fillets are ready when the meat easily flakes apart. Bon appetit!

Cajun Grilled Amberjack With Captain Michael Belvin

Captain Belvin thinks this Amberjack recipe is one best served spiced. You’ll want to marinate your Amberjack fillets with a 1/2 cup of Olive Garden dressing, a 1/2 cup of Worcestershire sauce and a hearty dose of black pepper. Let your fillets marinate for at least one hour before draining the liquid. Pat dry your marinated fillets and season generously with Cajun seasoning before placing them on a hot grill. When your fillets are cooked to your liking, top them with pads of butter and serve with a side dish of Cajun rice or jambalaya. Mouthwatering.
