Jen Merchant’s Fried Flounder Sandwiches; With Spicy Mayo

Jen Merchant, a fishing guide and established outdoor writer, has been a member of the Salt Life team since 2015. She specializes in tagging sharks for research as well as catching fish from the surf, and using those catches to make delicious ocean-inspired fare. She recently shared with us her recipe for fried flounder sandwiches with homemade spicy mayo, and we’re excited to pass this team member favorite along to you.

Sandwich Ingredients:

Fresh Flounder Fillets


2 Eggs

2 Cups of Flour

2 Cups of Panko Breadcrumbs

2 Cups of Chopped Lettuce

Ciabatta Rolls


Spicy Mayo Sauce Ingredients:

3 Tablespoons of Mayo

2 Tablespoons of Creole Seasoning 

1 Tablespoon of Freshly Squeezed Lime Juice

For this recipe, the first thing you’ll make is the spicy mayo sauce. In a medium bowl, mix the mayo and creole seasoning. The mixture should be tinted pink when adequately incorporated. Then, add the lime juice. Note that too much lime juice will make the sauce runny. Mix all three ingredients, ending up with a nice smooth, thick texture.

Place this sauce to the side while you work on the flounder for the sandwich. Beat two eggs and place them in a shallow medium bowl to get started on this part of the recipe. Then, in two other bowls, add the flour and panko breadcrumbs, respectively. One flounder fillet at a time, dredge the fish in flour, then coat evenly with the egg mixture, and finally coat with panko.

In a large skillet over medium heat, fry the fillets in oil for about 2 to 3 minutes on each side. When they are done, the panko breading will be golden brown. Quickly remove the fillet from the oil and place it on a paper-towel-lined plate.

Next, cut the ciabatta rolls in half and toast both sides. Spread the spicy mayo on both sides of the toasted ciabatta rolls. Add shredded lettuce to the bottom bun, topped with your fried flounder fillet. Place the top bun on, snap a quick pic for @RealSaltLife and #SaltLifeCooks, then ENJOY!
