Catch, Clean, and Cook on the Open Water with Bri Andrassy; This is as Fresh as It Gets

We caught up with one of Salt Life’s Stand Up Paddleboard (SUP) and fishing pros - Bri Andrassy - as she caught, cleaned, and cooked some saltwater grub over an open flame. She showed us how it’s done down in South Florida, and taught us a thing or two about paddleboard spearfishing.

Bri demonstrated how she uses her paddleboard to get out onto the open water to drive for lobster and spear saltwater fish. She caught a monster of a lobster, and speared a good size porgy, which later turned into lunch on the beach.

Start with Fruit Juice

Citrus fruit juice is the key to this dish, as it not only marinates the fish but cures it. Curing the fish means that when you eat it, you aren’t eating raw fish – a common misconception when it comes to ceviche. The fish used in this dish is considered “cooked” after marinating in fruit juice for at least 30 minutes.
